Refreshing a Borough Market icon.
Brindisa London Bridge is a hugely successful tapas restaurant that, after opening in 2004, was in need of a refurbishment.
The brief was to increase covers, improve operational efficiency and create a refreshed look and feel that would be a gentle evolution rather than transformative. The key was to listen to the founders, work closely with the operations team and hear the views of their customers.
With a quick turnaround on site, the scheme delighted customers and made operating this busy location easier for the operations team.
